Our selections #11

djfoodie:

"In short: This simple and delicious chicken salad is HIGH on my list of things to eat, but ... I don't know how to make it purdy. It's a tasty little mayonnaise salad in a bowl, which ... kind of ... belongs in a bowl."

epicurious:

"Dickson's Farmstand Meats is a unique butcher, sourcing their meats from farms with extraordinarily high standards. It is only natural (pun intended) that their chili recipe would be uncommonly good, loaded with flavor as well as detailed techniques for great results. This is not your granddaddy's chili! For example, the main meat is beef shank, a highly gelatinous cut that gives a luscious smoothness to the sauce. The meat is marinated overnight before cooking, and the seasoning gets complexity from smoky Turkish Urfa chile flakes. If you have the time, refrigerate the chili overnight before serving to mellow the flavors."

"This recipe was inspired by one I saw in Greene on Greens, a vegetable cookbook I bought used on Amazon.com for a few dollars after my nephew Jake recommended it. The book was first printed in 1984, and tastes have changed a bit since then.  I lightened up the recipe quite a bit, switching olive oil for butter, using milk instead of heavy cream, and using lower-fat cheeses.  I also left out the bread crumbs so I could eat this for phase one.  Even with those changes this was creamy and delicious, something I'd eat a small slice of paired with something light on the side."

"I have long been a fan of the baked frittata and/or crustless quiche, and when you bake them in 1/2 pint wide mouth mason jars, it transforms into the perfect grab and go breakfast or lunch. Just throw one in your cooler bag and you’ve got a nourishing meal ready to go…anytime…anywhere. God forbid you devour it on your way to work, driving your kids to hockey practice,  in front of your computer, or while listening to your colleague go on in monotone about her weekend of knitting and caring for her 10 orphan cats."

LAUREN'S LATEST:

"I was deciding whether to post this {stupid simple} recipe or another tasty {but very ugly} Mexican casserole. I initially started working away on the other post when my husband came along and tried to figure out what food was in my pictures. That in itself sealed my casseroles’  fate, the poor thing. That cheesy concoction will never see the light of day. So I’m staying up later than normal to write this post for you all.
The things I do for you people! Lol!"

"Here is a Cashew Beef Stir Fry recipe that pairs well with cauliflower rice. It can easily be doubled to make enough leftovers for lunch the next day or re purposed into a new meal by adding some vegetables and making an egg frittata out of it."

Our selection #7

LEMON AND COCONUT PORK
Ditch The Carbs:

"This is a dish my mother made for us, but with a few extra veggies thrown in. We didn’t have Bok Choy or broccoli in our version so I have adapted it to what I’ve shown here. We used to call our version of Lemon and Coconut Pork dish “pork and crunchy celery”. The sauce was thickened with cornflour, and it was served with rice. I just serve the Lemon and Coconut Pork in a bowl. Double the veggies rather than having it with rice."

Thai Green Chicken Curry
THE DOMESTIC MAN:

"I’m a big fan of Thai curries, and Green Curry is one of my favorites. It’s been a couple years since I tackled my last Thai curry (Panang Curry), so I thought it was time to share another recipe. Like in my Panang Curry recipe, this recipe is a template for you to adjust as you see fit; directions on how to change the protein or add vegetables are provided below the recipe.
The Thai word for Green Curry (แกงเขียวหวาน) actually translates to “Sweet Green Curry”, but that doesn’t imply that this dish is sweet. Instead, “sweet green” means “light green” in Thai"

paleOMG:

"Ok, so like it usually is on Mondays, it’s an ALMOST 5 ingredient recipe. But the garlic powder and salt and pepper totally don’t count as an ingredient. Sorry I’m not sorry. It tastes good and it’s simple. That’s the whole point of Mondays."

"For today's post I followed the recipe from the folks at The Lucky Penny.  However instead of making one large pizza I divided the dough into sixths and made fun Valentines shaped mini pizzas.  You could certainly get creative!

Kalyn's Kitchen:

"This delicious cauliflower recipe is something I enjoyed with Roast Pork with Herb Rub; the cauliflower went into the oven when I lowered the temperature on the pork and it was a perfect side dish. This dish is a close cousin to the Broccoli Gratin with Swiss and Parmesan I made at Thanksgiving, with a few changes. Obviously you can guess that I switched low-fat sharp cheddar for the Swiss cheese, but I also replaced some of the mayo with low-fat sour cream, which I thought worked with cauliflower and made the dish a bit lighter. The cauliflower needed a little more cooking before the gratin is assembled, but this was still very simple to make, and completely delicious!"

Low Carb Portobello Pizzas
Lauren's latest:

"Anyways, this portobello pizza is pretty amazing, considering there is no real crust. {I know. I’m posting meals with no carbs in them. What has become of me?!} It tasted *just* like pizza. If you don’t like mushrooms, then you’re probably not going to like this. If you do like mushrooms, then get a fork at the ready. Cook these babies on an indoor grill, fill them up with cheese and whatever pizza toppings you’d like and finish them off under the broiler. That’s it! Ready to eat in about 15 minutes."

Warm Chicken Salad from DJ Foodie:

"I reached into my mind and pulled this out for her to wrap her head around. I suggested she take a large salad bowl and make a massive filling salad for 2 ... and eat the whole thing herself! I suggested berries, chicken, pecans, and a touch of balsamic vinegar. I really wanted her to feel a sense of relief, that this way of eating no longer requires miniscule portions and a starving mindset. This is a wonderful, full, healthy and endlessly interesting way to eat."

Italian Cheesy Sausage Zucchini Bake from beautyandthefoodie.com:

"This Italian cheesy sausage zucchini noodle bake is a creamy, comfort food casserole.  I love this simple, savory casserole that is healthy and low carb. I used to hate casseroles, while growing up in the 70’s. Since there were some really awful ones floating around during that decade. If you’re too young to know about this, then let me share some with you: the green Jello with grated veggies in it casserole, and the ever popular tuna casserole with mayonnaise and peas. Okay, I’ve scared you enough, but do Google “awful 70’s casseroles” sometime for a good scare. This casserole is a tasty one and not scary at all.  This is where I bought  my  Spiral Veggie Noodle Maker, that makes zucchini noodles fast and easy!"

Beef & Vegetable Stir Fry from Kate Freeman:

"I love Jamie Oliver, I really do.
He’s extraordinarily passionate about food and cooking. So much so, its contagious. I want to start gnawing on my fingers while I’m watching him on TV – even after I’ve already had dinner… So much yumminess on the screen.
I do find, however, that his so-called 15 minute meals are a little far fetched. They’re probably only that quick to create if you’re a professional chef, have someone cleaning up after you and have your ingredients prepped and ready to go."

Ham Cheddar Chive Souffle from ruled.me:

"These little souffle’s are perfect for single serve breakfasts for everyone – packed full of fresh and delicious flavors, and savory meat to keep the fat up and the protein levels down. Normally I just gobble down some coffee to start the day, but there’s always those occasions when I’m looking for a little bit more. Something that will satisfy me, make me feel good while eating, and not just be a plate of sloppy eggs drowned in butter."
