"This recipe was inspired by one I saw in Greene on Greens, a vegetable cookbook I bought used on Amazon.com for a few dollars after my nephew Jake recommended it. The book was first printed in 1984, and tastes have changed a bit since then.  I lightened up the recipe quite a bit, switching olive oil for butter, using milk instead of heavy cream, and using lower-fat cheeses.  I also left out the bread crumbs so I could eat this for phase one.  Even with those changes this was creamy and delicious, something I'd eat a small slice of paired with something light on the side."

LEMON AND COCONUT PORK 
Ditch The Carbs:

"This is a dish my mother made for us, but with a few extra veggies thrown in. We didn’t have Bok Choy or broccoli in our version so I have adapted it to what I’ve shown here. We used to call our version of Lemon and Coconut Pork dish “pork and crunchy celery”. The sauce was thickened with cornflour, and it was served with rice. I just serve the Lemon and Coconut Pork in a bowl. Double the veggies rather than having it with rice."

"This delicious cauliflower recipe is something I enjoyed with Roast Pork with Herb Rub; the cauliflower went into the oven when I lowered the temperature on the pork and it was a perfect side dish. This dish is a close cousin to the Broccoli Gratin with Swiss and Parmesan I made at Thanksgiving, with a few changes. Obviously you can guess that I switched low-fat sharp cheddar for the Swiss cheese, but I also replaced some of the mayo with low-fat sour cream, which I thought worked with cauliflower and made the dish a bit lighter. The cauliflower needed a little more cooking before the gratin is assembled, but this was still very simple to make, and completely delicious!"
